On Chatham High Street, as it narrows through Intra towards Sun Pier, Mrs Sourdough sits quietly within the line of shops. There is little to draw attention from the street. It is the kind of place you tend to know about before you arrive.

Founded by Kat, who began baking at home after struggling to find good sourdough locally, the bakery grew through word of mouth into a dedicated space on the High Street. It now forms part of the slower, independent rhythm returning to this stretch of Chatham.

On a recent visit, scaffolding covered the exterior. Workmen moved in and out, sawing and repainting, the bakery mid transition as the kitchen is being refurbished ahead of a short closure. From the street, it would be easy to assume it was shut, but the door remained open.

Inside, the space feels settled and lived in. Tables and chairs sit near the entrance, catching the light from the front of the shop. To the left, a vintage dresser holds loaves wrapped in brown paper, set aside for the next customer. Further along, set into the middle length of the shop on the left, the serving counter anchors the space. As the day moves on, the shelves gradually empty. By mid afternoon, only the last of the breads, pastries and cakes remain, a quiet indication of how quickly things move here.

The baking follows a slower process. Sourdough made through natural fermentation, shaped by time rather than speed. The result is a soft interior with a slight chew, held within a crisp crust.

There is a steady rhythm to the place. The smell of bread in the morning, coffee through the day, and a sense that visits become habitual rather than occasional. Even in the middle of renovation, that rhythm holds.

It forms part of the everyday rhythm of Chatham, shaped by routine.
